
You Say Potato, I Say Taco
The appeal of a baked potato is lost on me. It doesn’t matter if it’s fully loaded with smoked bacon bits, cheese, sour cream and chives. If it isn’t served with steak, I’m not interested.
But lean times require desperate measures, and since potatoes are only 50 cents and about 250 calories, I decided to give one the Tex Mex treatment. Here, the baked potato is sliced almost in half, like tortilla shell, topped with leftover Mexican Corn Salad, and a bit of salsa and cheese.
