Anytime Cookies
Packed with protein, whole grain, and dried fruit, this is a baked good that’s actually good for you. Munch on one with your morning coffee, grab one in lieu of a PBJ for lunch, or nuke and serve with ice cream for dessert. You can eat one anytime, just don’t eat one all the time. - Ashley

To make it you need: 
2/3 cup of flour        1/4 teaspoon of salt 1/2 teaspoon cinnamon 1/2 teaspoon baking soda 1 stick of regular margarine 1/2 cup brown sugar Splenda* 1/4 cup Splenda* (the cooking kind, not the kind you put in coffee) 1/2 teaspoon vanilla 1/2 cup of egg whites 1 1/2 cups of oatmeal 1/2 cup chopped pecans or walnuts 3 ounces dried cranberries 1 ounce raisins
*People like Jen who are opposed to artificial sweeteners should substitute Splenda with real sugar. But that calorie count is going up.
1) Mix flour, salt, cinnamon, and baking soda together and set aside. 2) Melt the butter in the microwave. 3) Mix the butter with the sugar. 4) Mix in the vanilla, eggs, and the stuff you just set aside. 5) Mix in the oatmeal. 6) Mix in nuts and dried fruit. 7) Bake at 350 degrees for 10 minutes.
Makes two dozen.
